Apple Coffee Cake

Recipe by The delicious coffee cake will leave you wanting more. There is never a crumb left in the house after it comes out of the oven. The apples make the cake moist and delicious. From the kitchen of Rebekah Osowick.

Ingredients:


  • Cake Ingredients:
  • 2/3 cup all purpose flour
  • ½ cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon (I usually double or more)
  • ¼ tsp salt
  • 1 ½ cup finely chopped, peeled apples
  • 1 egg, beaten
  • ¾ cup sugar
  • ¼ cup chopped walnuts
  • ¼ cup applesauce
  • Topping Ingredients
  • ¼ cup packed brown sugar
  • 1 Tbsp all-purpose flour
  • 1 Tbsp whole wheat flour
  • ½ tsp ground cinnamon
  • 1 Tbsp butter

Directions:


Place medium round mold on perforated baking sheet and set aside. In a mixing bowl, stir together the flours, baking soda, cinnamon and salt for the cake mixture. Combine the apples and egg in a large bowl. Stir in the granulated sugar, nuts and applesauce. Add the dry mixture and stir. Fold in walnuts. Pour batter into round mold. For topping, stir together the brown sugar, flours and cinnamon. Cut in the butter. Stir in the nuts. Sprinkle topping over batter in pan. Bake at 350 degrees for 30-35 minutes or until a toothpick comes out clean. (Adapted for Demarle from Better Homes and Gardens New Cook Book)
