Asparagus Tart

Recipe by Try drizzling our Mediterranean Balsamic Vinegar with Fig on top of this tart!


  • 1 sheet frozen puff pastry
  • 2 cups Gruyere cheese, shredded
  • 1 1/2 lbs thick asparagus
  • Red, green, and yellow bell peppers, sliced
  • Sel Gris Sea Salt, to taste
  • Freshly ground pepper, to taste


1. Preheat oven to 400 degrees F and place oven rack in center position.

2. Place puff pastry onto Roul’Pat® and gently roll out to a 16” x 10” rectangle with Beechwood Rolling Pin.

3. Place Flexipat® on Perforated Baking Sheet and place pastry on Deep Flexipat®. Score the pastry dough one inch from the edge making an inner rectangle using the cake server knife on the non serrated side. With a fork gently pierce the inner rectangle once or twice per inch (do not pierce the Flexipat).

4. Bake for 15 minutes or until golden brown. Remove from oven and sprinkle cheese atop the pastry.

5. Trim the asparagus to fit the inner rectangular of the pastry or place asparagus in a single layer over the cheese and alternate the tips and ends. Scatter the colorful pepper slices next and then season with sea salt and pepper and bake until tender, about 20-25 minutes.
