Banana Berry Muffins (Paleo and Vegan)

Recipe by While living a strict dietary protocol, I try to make most of our meals nutrient dense. My son wanted berry muffins, so I got in the kitchen and created these! Have fun, be creative, and customize this recipe to suit your needs!

  • 1 C Nut or Seed Butter
  • 1 C Nut or Seed Flour (ex Almond Flour)
  • 3 Ripe Bananas, mashed
  • 1/4 C Raw Honey (sweeten to taste)
  • 1/4 C Fat of Choice (Coconut oil, Butter, Ghee, Red Palm Oil), melted
  • 1/6 C Chia Seeds
  • 1/6 C Hemp Hearts or Shredded Coconut
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp DAH Red Hawaiian Sea Salt
  • 1 tsp Ground Cinnamon
  • 1/2-1 C Fresh Berries (I used Blueberries and Diced Strawberries)

1. Preheat oven to 350F degrees. In a DAH mixing bowl, mix nut/seed butter, nut/seed flour, bananas, honey, and fat of choice together until smooth. Add in the remaining dry ingredients until thoroughly mixed. Fold in the fresh berries.

2. ) Place preferred Demarle tray on your perforated baking sheet. Using the Large Batter Scoop, fill each well with batter. Bake for 20-25 minutes until the muffins spring back when lightly touched. The middle may sink a little, its a great butter nook! Cool and Enjoy!

Yield 12-15 muffins.Notes**If you can consume egg, you can replace the chia seeds and 2 bananas with 2 eggs.**If you use Sunflower Seed Butter or Flour, please note that it will react with baking soda and turn batter/muffins green in color. There is nothing wrong with this and they are completely edible.***If you would rather use Coconut products, you could try using Coconut Butter in place of Nut/Seed Butter and 1/4 C Coconut Flour in place.
