Banana Muffins

Recipe by One of my favorite hosts, Karen E., shared this recipe with me at a brunch party. They have so much wonderful banana flavor! You can substitute gluten-free or whole wheat flour for a healthier version. I freeze bananas as they get too ripe, then make this bread when I have enough.

Ingredients:


  • 1 cup butter, softened
  • 2 cups sugar
  • 4 eggs
  • 6-7 very ripe bananas
  • 2 1/2 cups flour
  • 1 teaspoon salt
  • 2 teaspoons baking soda

Directions:


Using a mixer, cream together butter and sugar. Add eggs and bananas. In Stainless Mixing Bowl, sift together flour, salt, and baking soda. Add dry ingredients to banana mixture, just until incorporated. Scoop into desired tray (Deep Heart, Butterfly, Mini Muffin and Teddybear Trays shown in picture). Bake at 350F until a toothpick inserted in center comes out clean, approximately 18-20 minutes for Mini Muffin Tray. Allow to cool completely, then pop out and enjoy!
