Banana Nut Muffins

Recipe by Great hearty muffin to go with your breakfast!

Ingredients:


  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup mashed ripe banana (about 2 bananas)
  • 1 egg
  • 1/4 cup margarine, melted
  • 1/4 cup low fat buttermilk
  • 3 tbsp canola oil
  • 1 tsp vanilla extract
  • 1/3 cup walnuts, plus extra for toppings
  • 1/4 cup dark chocolate chips (optional)

Directions:


Preheat oven to 350 degrees.Whisk flour, sugar, baking powder, baking soda, and salt in a bowl.Mix together banana, egg, margarine, buttermilk, oil, and vanilla extract in separate bowl until smooth. Slowly add in the flour mixture, walnuts, and chocolate chips and mix thoroughly. Fill muffin cups 3/4 full and sprinkle walnuts over top. Bake 15-20 minutes. Makes 8 large muffins in Texas Muffin Tray.
