Berry-Licious Cake with Cream Cheese Icing

Recipe by This is one of my husbands favorite! The cream cheese is so yummy but not overly sweet! These are always a hit when I bring them to a party!!

Ingredients:


  • 1 pkg White Cake Mix
  • 1 container (16oz) Frozen Strawberries in water/sugar (thawed)
  • 3 egg whites
  • 2 Tbsp Veg. Oil
  • 2 (8oz) pkgs cream cheese(must be at room temp)
  • 1/2 cup butter (must be at room temp)
  • 2 1/2 cups powdered sugar (must be sifted well)
  • 1 tsp pure vanilla extract

Directions:


Place tender heart mold on perforated baking sheet and set aside. Preheat oven to 350.Drain berries reserving liquid in a measuring cup. Add enough water to make 1 1/3 cups of liquidIn large bowl, combine cake mix, berry liquid, egg whites and oilBeat for about 2 minutes, then fold in thawed berries. Pour into mold about 2/3 to top keeping in mind that this makes more than will fit in the mold (can do individual cupcakes if desired, just back off the cooking time)Bake 25-30 mins or until a toothpick inserted comes out clean. Remove and cool completelyFROSTINGIn a stand mixer bowl, cream together cream cheese and butter until smooth and creamy. Mix in vanilla, then gradually add in the powdered sugar and mix until creamy.Once the cake is cooled completely, flip out of mold and frost the cake or pipe cream cheese to decorate. I added red sanding sugar on the top!!
