Black Bean and Mango Quinoa Bowl

Recipe by I like to use the leftovers in the morning by adding either a scrambled egg or by putting a 1/2 c. of quinoa/bean salad in the mini cake pan, crack an egg over the top and bake at 375 degrees for 15 minutes. Recipe submitted by Cheryl Sisco


  • 1 C quinoa
  • 2 C chicken broth
  • 1 can black beans, rinsed
  • 5 scallions, thinly sliced
  • 1 mango, seeded and chopped
  • 1 lime, juiced
  • 1 tsp DAH Spice for Life Coriander
  • 1-2 Tbsp DAH Cilantro Olive Oil Blend
  • Salt and pepper, to taste
  • Garlic powder, to taste


1. Combine chicken broth and quinoa in a Round Mold. Cover with Octagonal Silpat. Microwave on high for 9 minutes (this will depend on your microwave wattage). Leave covered in microwave for at least 5 minutes until all liquid is absorbed.

2. While quinoa is cooking, rinse black beans and prepare all veggies and mango. Combine 1/2 of the cooked quinoa and the remaining ingredients in a bowl and dress to your desired taste.
