- 3 egg whites
- 2 lbs pecans
- 2 3/4 cups sugar
- 3 tablespoons cinnamon
- 1 tablespoon salt
1. Preheat oven to 275 degrees F and place oven rack in center position. Place Silpat® on Perforated Baking Sheet and set aside.
2. Using mixer, beat egg whites until stiff peaks form. Fold in pecans and coat well. In separate mixing bowl, mix sugar, cinnamon and salt. Add pecans and mix well.
3. Spread evenly onto Silpat and bake for 80 minutes but mix every 20 minutes.
