- 1/2 cup milk
- 1/2 cup water
- 1 stick butter
- Pinch of salt
- 1 cup flour
- 4 eggs, beaten
- 5 oz shredded cheese
- Pinch of pepper
1. Preheat oven to 400 degrees F and place Silpain on Perforated Baking Sheet and set aside. In saucepan, bring milk, water, butter and salt to a low simmer.
2. Remove liquid from heat and add flour all at once. Stir with spoon until incorporated. Return to heat, continuing to stir until mixture forms a layer on bottom and ball of dough pulls away from side. Remove from heat.
3. Place dough ball in a stand mixer with beater attachment. Add egg one at a time, until fully incorporated. Add 4 ounces of cheese and a pinch of pepper and stir.
4. Place large dollops of batter onto Silpain and sprinkle with remaining cheese. Bake for about 20 minutes or until tops are deep golden brown. Turn off oven and crack the oven door slightly. This will help keep the tops from collapsing.
