Chicken Fingers

Recipe by We just LOVE homemade Chicken Nuggets and they are SO much healthier. Moist on the inside, crispy on the outside. YUM! By Ronda

Ingredients:


  • 1/2 cup butter, olive or coconut oil
  • 4 cups plain, Italian bread crumbs or Panko (You can make your own from GLUTEN FREE bread and substitute!)
  • 2 lb chicken tenders or chicken breasts cut into even strips
  • 1-2 tsp granulated garlic powder
  • Demarle at Home Bolivian Rose Sea Salt and fresh ground pepper to taste
  • 1 teaspoon Demarle at Home Herb Blend of choice (optional)
  • 4 eggs
  • 1 bottle Sweet Baby Ray's Honey Mustard Dressing, divided
  • 1 bottle Sweet Baby Ray's barbecue sauce for dipping (optional)

Directions:


Pre-heat oven to 425 degrees

Melt 1/2 cup butter in sauté pan over medium heat. Add one box Panko crumbs or 4 cups plain/Italian bread crumbs.

Brown crumbs on medium heat, stirring often to avoid over browning. This process makes tons of difference on how delicious this EASY recipe is!

Add granulated garlic powder, salt, pepper and herbs as desired. Once browned, set aside to cool slightly.

Meanwhile, place Large Silpat or Deep Flexiflat on Perforated Baking Sheet. In a shallow dish, beat 4 eggs. Stir in 1/4 cup Sweet Baby Ray's Honey Mustard Dressing.

Dredge whole chicken tenders or chicken strips in egg mixture and then coat with prepared bread crumbs. Lay pieces close to each other on Silpat, do not allow to touch.

Bake for 12-15 minutes depending on sizes. Remove largest piece to a saucer and cut into thickest part to make sure all juices run clear.

No need to flip or turn food when using Silpat/Flexipan!

Serve with Sweet Baby Ray's Honey Mustard Dressing or Tangy Barbecue Sauce for dipping.

NOTE: Crispy coating is GREAT for fish or on casseroles as toppings, you name it!

I had chicken in the fridge and didn't know what I was going to do with it. So, I pulled up the Demarle website and found this recipe. I did not have the Sweet Baby Ray's honey mustard sauce, so I just used our Sweet Baby Ray's BBQ sauce with 1/2 tsp. Dijon mustard and 1/2 tsp. honey. My husband said it was one of the best things he's ever tasted.
