Chicken Pot Pie

Recipe by If I can make it, you can make it! Pretty quick and simple. Silform gives the crust the perfect taste and texture.


  • Pastry for double crust pie- homemade or store bought
  • 1/3c ea peas, carrots, corn
  • 1/4c butter
  • 1/3c flour
  • 1/2t salt
  • 1/2t dried thyme or sage
  • 1/8t pepper
  • 2c chicken broth
  • 3/4c milk
  • 2c cooked chicken or turkey chopped


Roll dough on roulpat. If making individual pot pies for the silform round tray, cut 5 1/2" rounds and gently press into each opening, remembering that you're going to have to pinch the top and bottom pieces together. Place mold on top of silpat (in case of spills) on top of perforated baking sheet. Cook the peas, corn, carrots and drain. In a saucepan melt the butter. Stir in flour, salt, thyme/sage, pepper. Add broth and milk. Cook and stir til thickened and bubbly. Add chicken and vegetables. Cut out the "top" piece of crust, 5 1/2". Scoop mixture into crust. Add top, pinching top and bottom together. Cut slits in the top for steam to escape. Bake at 450 for 12 minutes.
