Chop and Freeze for Later

Recipe by Maximize the summer's bounty by putting away extra produce for use in the winter. Sweet bell peppers are pictured here. Where I live they can run over $1.00 per pepper in the long winter months. The muffin tray is exactly 1/2 cup (4 oz) so is perfect for my many recipes.

Ingredients:


  • Bell peppers, washed, seeded and chopped ~ or sweet onion...you name it :)
  • Gallon Freezer Bags

Directions:


Place Muffin Flexipan Tray on Perforated Baking SheetFill each muffin well with prepared produce.Cover with Medium Silpat and place in freezer overnight. The next day, simply pop out frozen produce and store in freezer with tightly sealed freezer bags.So easy to later pop into soups and sauces and saves so much time - SWEET!
