Cindy’s No-Bake Gluten-Free Granola Bars

  • 4 cups gluten-free quick cook oats
  • 2 cups rice cereal
  • 1/2 cup butter
  • 1/2 cup shredded coconut
  • I cup Energy Trail Mix
  • 1/2 cup honey
  • 1 cup brown sugar
  • 1 tsp Spice for Life cinnamon
  • 1/2 tsp ginger
  • 1 tsp salt
  • 1 tsp vanilla


In a large mixing bowl, add the oats, rice cereal, and coconut. Mix together well and set aside.

In a small sauce pan on the stove, add the butter and melt over a medium high heat. Add the honey, brown sugar, Spice for Life cinnamon, ginger, salt, and vanilla. Stir to combine and then let mixture come to a boil with disturbing it. Once the mixture is boiling, set a timer for 2 minutes and 15 seconds. Allow the mixture to continue boiling undisturbed. You may need to lower heat a little to avoid a boil-over but be sure that the mixture maintains a boil the whole time.

Pour the mixture over the oats. Be sure to use a spatula to get all the mixture out of the saucepan. Stir well to combine.

Add the coconut and the trail mix. Other ideas include, chocolate chips, dried cherries, dried cranberries, raisins, or other chopped nuts.

Pour mixture in the Deep Flexiflat and press in firmly. You can top with a Silpat and roll over the top to compress the granola into the Flexiflat.

Refrigerate for 20 minutes. Peel the Deep Flexiflat back and place bars on cutting board to cut to a desired size.
