Compound Butters

Ingredients:


  • 1 cup unsalted butter, divided
  • 1/4 cup honey
  • 2 teaspoon orange or lemon zest
  • 1 tablespoon Blood Orange Olive Oil Blend
  • 2 tablespoons sugar
  • 2 teaspoon cinnamon
  • 2 tablespoons chopped herbs of choice (chives, basil, rosemary, thyme, etc.)
  • 1 1/2 teaspoon minced shallots
  • 1/4 teaspoon garlic paste
  • Pinch of white pepper

Directions:


1. Place tray of choice on Perforated Baking Sheet and set aside. Whip unsalted butter until fluffy. Combine 1/2 cup unsalted butter with honey, zest, Blood Orange Oil, sugar and cinnamon. Set aside.

2. Combine other 1/2 cup butter with herbs, shallots, garlic and pepper. Using spatula add the two different butters to wells and refrigerate until firm. Unmold onto serving plates.

Compound butters may be stored in freezer, tightly wrapped or in the refrigerator.
