Cranberry Lemon Biscuits

Recipe by I made these to go with a chicken or turkey meal. The cranberry lemon biscuits would go well with a Thanksgiving meal or as a treat for an afternoon tea. Heidi Gallen, Product Focus Group Member


  • 3 c flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp Spice for lIfe ginger
  • 1/2 tsp salt
  • 1/4 c sugar
  • 10 Tbsp butter cut into small pieces
  • 1 egg
  • 3/4 c sour milk
  • 1 c cranberries coarsely chopped (used the eco-chop)
  • 1 tsp lemon zest
  • 1 beaten egg for brushing the tops of the biscuits
  • Bourbon vanilla sugar for sprinkling the tops of the biscuits


preheat oven to 400 degrees F., place Silpat on Perforated sheet.Sift together flour, baking powder, baking soda, ginger, salt and sugar. Cut in the butter pieces. Mix egg and sour milk and add to dry ingredients. Fold in cranberries and lemon zest.Turn out the dough on the Roul Pat and knead dough. Add flour if needed to make dough manageable. Roll out dough to 1 inch thickness and use square or round cutters to create biscuits. Place on the Silpat.Bake 15 minutes or until golden brown on top.
