Crustless Spinach Quiche

Recipe by I've made these twice now and both times were a huge hit! Easy and super delicious! This recipe was originally found on allrecipes, but we changed the cheeses and made them individual quiches.

Ingredients:


  • 1 Tbsp vegetable oil
  • 1 onion chopped
  • 10 oz frozen chopped spinach, thawed and drained
  • 5 eggs beaten
  • 2 cups shredded swiss cheese
  • 1/4 cup shredded parmesan cheese
  • 1/4 tsp sel gris sea salt
  • 1/8 tsp ground black pepper

Directions:


Preheat oven to 350chop onion with Santoku Chef knife.heat oil in skillet over medium high heat, add onions and cook, stirring occasionally, until they are soft. Stir in spinach and continue cooking until excess moisture has evaporated.In stainless steel mixing bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into straight muffin tray (or tray of your choice for design)Bake for 25 minutes. Let cool 10 minutes before unfolding.
