Custard Tartlets

Recipe by Enjoy! I love custard desserts, and this is delicious!


  • 1-1/2 cups flour
  • 1/2 teaspoon salt
  • 1/2 cup shortening
  • 4 Tablespoons cold water
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2-1/2 cups half & half
  • 1/2 cup butter
  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • ground cinnamon for sprinkling


Place silform 12 tart tray on medium perforated bake sheet & set aside. Preheat oven to 450. For pie crust, place flour, salt, & shortening into mixing bowl and blend with pastry blender till crumbly. Add 4 tablespoons cold water & mix with hands to form a ball. Place on DAH roul'pat & roll out till about 1/8" thick. Using the 3-7/8" dough cutter, cut 12 tartlet shells, press into the tartlet shells, and carefully prick with a fork. Bake for 8 - 10 minutes until lightly browned.In medium saucepan, combine sugar, cornstarch, & salt. Whisk in the half & half & cook over medium heat until mixture is thickened & bubbly, stirring occasionally. Remove from heat, add butter, brown sugar, & vanilla & stir until butter is melted. Pour into baked pie shells & sprinkle lightly with cinnamon.
