Easy Taco Cups

Recipe by Have dinner on the table in 25 minutes from start to finish. A light, satisfying taco that is also figure friendly. I love making these when my family has little time for dinner, also a great on-the-go dinner idea. Posted by: Katie Merritt


  • 1 lb. ground meat (chicken or beef)
  • 1/2 small onion, chopped
  • 1/4 cup taco sauce
  • salt to season the meat - optional
  • 24 Wonton wrappers
  • 1 can pinto beans with jalapeno
  • 1 cup frozen corn kernals
  • 1/2 cup shredded cheddar cheese
  • 1 tomato, diced
  • 2 cups shredded lettuce
  • sour cream to taste


Place the ground chicken in large round mold with onion, break up with spoon. Cover the round mold with the octagonal Silpat and microwave on high for 2 minutes. Break up meat again, add the taco sauce and season to taste, microwave 1 more minute.Using the Square Savarin Tray, lay two wonton wrappers in each well to create a "shell" for the taco.Layer in the taco fixings into the wonton "shells". In order from bottom to top: beans, meat, corn, and cheese. Bake the taco cups for about 15 minutes or until the wontons are browned. Let rest for about five minutes before unmolding to ensure the wonton is set up. Top taco cups with lettuce, sour cream, and tomato.
