French Pantry Lentil Soup

Recipe by Protein packed yet meatless meal. Perfect to freeze in the round tray so you will always have healthy options for lunch or a super quick dinner. Sara Lewis, Product Focus Group Member


  • 3/4 cup dried lentils
  • 1/2 tbls olive oil
  • 3/4 cup chopped carrot
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 2-3 garlic cloves, minced
  • 1 bay leaf
  • 1 1/2 tbls Demarle at Home Herbs De Provence
  • 3 tbls tomato paste
  • 3/4 cup cubed peeled sweet potato
  • 4 1/2 cups low-sodium chicken broth (or more depending on how much liquid you like)
  • grated parmesan cheese and chopped fresh parsley for topping


1. Rinse and drain the lentils; set aside. Add olive oil to a 2 quart flared sauté and heat to medium.2. Add the carrot, onion, celery, and garlic to the pot and sauté over medium head for 5 minutes or until tender.3. Add the bay leaf, herbs de provence, and tomato paste and still for 1 minute.4. Add the lentils and sweet potato and stir for another minute.5. Add the broth and bring to a boil; then reduce the heat, cover, and simmer for 40 minutes or until vegetables and lentils are tender. Stir occasionally.6. Season with salt and pepper to taste. Garnish with a sprinkling of parsley and parmesan. Adapted from Bob harper, The Skinny Rules.
