- Zucchini sliced into strips
- Gluten free flour (approx. 1/4 cup)
- Egg, beaten
- Gluten free pita chips, crushed, approx
- Parmesan or Asiago cheese
Preheat oven to 475 degrees F. Crush pita chips (I used garlic Parmesan pita chips). Coat zucchini strips in flour and dredge floured strips in beaten egg. Coat zucchini strips with crushed pita chips and spread on Silpat. Grate fresh Parmesan or Asiago cheese over zucchini strips and bake approx. 20 minutes.
