Gluten Free Zucchini Muffins

Recipe by This makes a nice sweet, moist, flavorful bread that is gluten free. 3 cups all purpose flour of your choice can be substituted to not be gluten free (the gluten free is a modified version of a family recipe) I missed my mom's delicious bread so I made a version I could eat! I hope you enjoy it too!

Ingredients:


  • 2 cups grated zucchini
  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 3 tsp vanilla
  • 2 cups sifted coconut flour
  • 1 cup sifted almond meal
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3 tsp cinnamon

Directions:


Preheat oven to 350.Mix zucchini, eggs, oil, sugar and vanilla.In separate bowl combine the rest of the dry ingredients. I add I some of the almond meal that could not sift for a little crunch. Mix dry with the wet.Scoop into the trays (typically fills 2 trays worth) of your choice (hearts are pictured, but I've done straight muffins, mini muffins....)Bake on perforated sheet for 20-25 minutes. Let cool for at least 10 minute and unmold to enjoy!
