Good to Go Hashbrown Egg Cups

Ingredients:


  • 1 bag (24 oz frozen then thawed hash browns
  • 12 eggs
  • 2 cups of shredded cheese
  • 1 lb of Canadian Bacon
  • 1 cup of fresh spinach chopped
  • 2 tablespoons of olive oil
  • salt and pepper
  • tomatoes sliced for garnish

Directions:


1. Mix a tablespoon of salt, 1 teaspoon of black pepper, 2 tablespoons of oil and about 1/3 cup of shredded cheese. Put in the Straight Muffin Tray and make a well in the center.

2. Bake at 425 degrees for 15-18 minutes.

3. Lower the oven to 350 degrees. crack a medium egg into each nest and top with salt and pepper to taste.

4. Top with bacon, cheese, spinach, and tomato.

Bake for about 13-16 minutes
