Grilled Red Skin Potato Salad

Ingredients:


  • 2 - 2 1/2 lbs small red skin potatoes
  • 2 tablespoons olive oil
  • 3 tablespoon Dijon mustard, divided
  • 1/2 teaspoon Bolivian Rose Sea Salt
  • 1/4 teaspoon black pepper
  • 3 ribs celery, thinly sliced
  • 4 green onions, chopped
  • 4 hard cooked eggs, chopped
  • 1 1/4 cups reduced fat mayo
  • 1 teaspoon Bolivian Rose Sea Salt
  • 1/2 teaspoon coarsely ground black pepper

Directions:


1. Preheat grill to medium-high heat. Cut potatoes into wedges and place in Flexipan® Round Mold. Microwave for 2 minutes.

2. In a small bowl, whisk olive oil, 1 tablespoon mustard, and salt and pepper together. Pour over potatoes, covering well.

3. Place potatoes, cut side down, onto grill for about 5 minutes or until they have grill marks. Flip to the other cut side and grill again. Remove and place in serving bowl. Cool for 5 minutes.

4. Add celery, green onions, egg and mix well. Add mayo, remaining mustard, salt and pepper. Mix well. Serve warm or chilled.
