Banana Quinoa Muffins

Recipe by My kids aren't great breakfast eaters and I like to try and sneak in a power packed breakfast that I know will be a crowd pleaser. This muffin is full of protien and other great ingredients. I always toss a handful of chocolate chips in when I want to seal the deal and ensure that something gets gobbled up.   • 1/2 cup dry quinoa
  • 1 cup whole wheat flour
  • 1/2 cup steel cut oats
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup protein powder
  • 1/4 cup sugar
  • 3 Tbsp honey
  • 1 egg
  • 2 ripe bananas, mashed
  • 1 tsp vanilla extract
  • 1 Tbsp olive oil
  • 2 Tbsp apple sauce
  • 1/3 cup chopped nuts (walnuts or almonds are good choices)
  • 1/2 cup chocolate chips, raisins, or craisins


1. Preheat oven to 375 degrees. Place the mini-miffin tray on the perforated baking sheet and set aside. Place the dry quinoa in any small mold and add 1 cup water. Cover with the octagonal silpat and cook in the microwave on high for 15 minutes or until completely cooked through.

2. In a medium mixing bowl, combine flour, oats, baking powder, salt, and protein powder. Whisk until completely mixed through and set aside. In a separate bowl, whisk together the sugar, egg, and honey until mixed and foamy.

3. . Add the vanilla, bananas, olive oil, and apple sauce and mix well. Add the cooked quinoa and stir to combine. Combine the dry and wet ingredients and stir until just moistened through. Fold in nuts and chocolate chips or raisins. Fill wells of the mini muffin to 2/3 full and bake at 375 degrees for 15 minutes (20-22 minutes for full sized muffins). **adapted from a recipe by Nourish 'Em (www.nourishem.com)
