Herb and Mustard Egg Nest

Recipe by Perfect for a lazy Sunday morning breakfast or brunch. Sara Lewis, Product Focus Group Member

Ingredients:


  • 5 small yukon gold potatoes - peeled and shredded
  • 6 eggs
  • 3 tsp French Pantry Provence Mustard
  • 1 tbls French Pantry Herbs de Provence
  • 6 tbls gruyere cheese
  • Black Lava Salt & pepper to taste

Directions:


Pre-heat oven to 350. Shred potatoes on a box grater and add to a bowl. Mix in mustard, cheese and then add in herbs. Place round tray flexipan mold onto medium perforated baking sheet. Fill all 6 wells 3/4 full with potato mixture. Bake for 15 minutes. Remove from oven and crack one egg at a time into each well. Bake another 15 minutes or until egg is cooked to your preference. Remove and season with black lava salt and pepper.
