Island Pineapple Cake

Recipe by So simple but so incredibly moist and flavorful - your family will LOVE this!

Ingredients:


  • For cake:
  • 1 cake box mix (yellow is my favorite)
  • 3 eggs
  • 2 teaspoons orange extract
  • 1 teaspoon coconut extract
  • 1 20 oz can Crushed Pineapple, undrained
  • For glaze:
  • 1 cup powdered sugar
  • 1/2 teaspoon orange extract
  • 1/2 teaspoon coconut extract
  • 1 tablespoon orange juice, water or milk (add more for desired consistency)

Directions:


Preheat oven to 350°Place Sunflower Flexipan Mold on Perforated Baking Sheet. No need to oil, flour or spay your flexipan - everything comes out perfectly!Stir ingredients for cake just until mixed - Slow speed with hand mixer for 1 minute - don't worry about the lumps. I like to run my pineapple in my Ninja Blender for a few seconds for smoother slices but this step is not necessary. Place cake in pre-heated oven. Reduce heat to 335 degrees.Bake 40-50 minutes. Every oven is different, mine takes exactly 42 minutes every time, so add minutes as needed. Will be beautifully golden when fully baked.Allow to cool completely and then invert serving platter on top of mold and flip over. Simply lift off mold and...VOILA!!!Whisk glaze ingredients together and drizzle over cake. Garnish with fresh fruit slices, berries or fanned strawberry like shown in picture.
