Lemon Cake with Lemon Glaze

Ingredients:


  • 2 1/2 cups all purpose flour
  • 2 cups sugar
  • 1 cup milk (can use regular milk, coconut milk or other milk substitutes
  • 1/4 cup Demarle Meyer Lemon Olive Oil Blend
  • 1/2 cup canola oil
  • 4 eggs
  • 2 1/4 tsp. baking powder
  • zest of 1 lemon
  • juice of 1 lemon
  • 2 cups powdered sugar

Directions:


1. Place oven rack in center position and preheat oven to 350 degrees F. Place sunflower Mold (or mold of choice) on Perforated Baking Sheet and set aside.In Mixing Bowl, beat (with an electric mixer) sugar and eggs together until slightly thickened, about 1 minute.

2. Add flour, milk, oil, baking powder, lemon zest and beat for another minute, just until batter is smooth and creamy. Do not over mix. Pour into Mold or Tray. Bake in the mold for 45-50 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.

3. Let cool completely before unfoldingLemon glaze: pure lemon juice (1 lemon) & powdered sugar (2 cups) to taste! Squeeze the lemon for the juice, add the powdered sugar slowly and use our Whisk to combine. Add more sugar or lemon juice as needed to create the glaze you want.
