Lemon Cream Cheese Pound Cake

Ingredients:


  • 3 cups granulated sugar
  • 1 1/4 cups butter, softened
  • 1 8 ounce cream cheese
  • 1 tablespoon lemon juice
  • 2 teaspoons vanilla extract
  • 1 teaspoon lemon extract
  • 1/2 teaspoon orange extract
  • 1/8 teaspoon salt
  • 6 eggs
  • 3 cups cake flour
  • 1 cup powdered sugar
  • 1 tablespoon butter, softened
  • 2 teaspoons grated lemon peel
  • 2 - 3 tablespoons lemon juice

Directions:


1. Preheat oven to 350 degrees F and place oven rack in center position. Place Flexipan® Fluted Bundt Mold on Perforated Baking Sheet and set aside.

2. In Mixing Bowl, beat granulated sugar, butter and cream cheese until fluffy. Beat in lemon juice, vanilla extract, lemon extract, orange extract and salt. Add eggs, one at a time, beating after each addition. Add flour and beat until smooth.

3. Pour 2/3 batter in mold and use other third for muffins or small cake. Bake for 40-45 minutes or until cake tester comes clean when inserted.

4. In Mixing Bowl, combine powdered sugar, butter, lemon and lemon juice at high speed until thick enough to pour over cake. Slice lemons and oranges and fill center of cake.
