Lemon Pound Cake

  • Tastefully Simple Sunny Lemon Pound Cake
  • Water
  • Butter
  • Powdered Sugar (optional)
  • Lemon Juice (optional)
  • Strawberries


1. Prepare Sunny Lemon Pound Cake as directed. Poor into Sunflower or other mold of your choice. Make sure to cook on the Perforated Baking Sheet for even baking. When baking, cut about 10 minutes from the cooking time (the pan is larger than the 8x8 recipe calls for so the cooking time needs to be cut back a little because it is thinner). Done when toothpick inserted comes out clean.

2. Allow to cool and turn out on to your serving dish. Make the icing per the instructions. This will give you a thin glaze. I wanted a thicker icing so I reduced the butter by half, added about a cup of sifted powdered sugar and some lemon juice for a bit of a stronger lemon flavor. I used a piping bag and tip for the icing and placed some sliced strawberries!

Note, I made the cake the night before I was serving and did the frosting and strawberries in the morning. Bon Appetite!
