Mango Raspberry Sorbet Cake

Recipe by Dinner in the Rounds

Ingredients:


  • 6 tablespoons unsalted butter, melted, plus softened butter for the pan
  • 1 1/2 cups finely crushed chocolate wafer cookies
  • 2 tablespoon sugar
  • 3 pints mango sorbet, slightly softened
  • 3 pints raspberry sorbet, slightly softened

Directions:


1. Mix the crushed cookies, sugar and melted butter in a bowl until combined.

2. Press the mixture into the bottom and about 1/4 inch up the side of a large round mold. Freeze until firm, about 15 minutes.

3. Scoop the mango sorbet over the crust in small batches, packing it in with an offset spatula; smooth the top.

4.Freeze until firm, about 45 minutes. Repeat with the raspberry sorbet and freeze until firm, about 45 more minutes.
