- 1 medium head cauliflower, cut in to florets
- 1/2 c milk
- 4 TB butter
- salt and pepper
Place your Large Round Mold on a microwave-safe plate. Rinse cauliflower then place in your Large Round Mold. Place plate holding Large Round Mold in the microwave. Cover with Octagonal Silpat. Steam for about 8 minutes, until cauliflower stems are very soft. Take out of the microwave using a plate. Add milk and butter. Then mash! (Depending on consistency preferred, you can use a potato masher to mix and mash right in the Large Round Mold. Or, throw it all in your food processor and blend/puree to desired consistency.) Add salt and pepper to taste.
