Mediterranean Pork Chops with Olive Tapenade and Feta

Recipe by This is a super healthy entree that is so fast and easy! I love these served with Quinoa, that can be made in the microwave with the Large Round Mold and the Octagonal Silpat in 20 minutes! Yes, perfect timing...while chops are baking! Or make a green salad with cucumbers and a little red onions and tomatoes and spritz salad with the DAH Lime or Lime Olive Oil and DAH Traditional Balsamic Vinegar and a dash of salt and pepper for a heathy alternative to calorie laden salad dressing!


  • 4-6 boneless, thin cut pork loin chops (can substitute chicken) DAH Zesty Mediterranean Herb Blend, DAH Sweet Basil Olive Oil
  • 4-6 Large garlic stuffed green olives, minced, 10-15 pitted Klamata Olives, finely minced, 1 tsp. capers, 2 tsp. finely minced fresh red pepper, DAH Sel Gris Sea Salt, Crumbled Feta Cheese ( i use the low fat version)


1. Preheat oven to 375' Place Deep Flexiflat on Perforated baking sheet. Place pork chops in the DAH Stainless Mixing Bowl and using the DAH Healthy Spritzer... spritz lightly, but evenly with the DAH Sweet Basil Olive Oil. Then sprinkle generously with DAH Zesty Mediterranean Herb Blend.

2. Place on the Deep flexiflat and bake for 15-20 mins. While chops are baking prepare Tapenade by mincing all ingredients except the capers. Transfer to small bowl and toss with 1 Tsp. DAH Sweet Basil Olive and a a little DAH Sel Gris Sea Salt.

That's it! When pork chops are ready, simply spoon the Olive Tapenade over each chop and finish with a sprinkle of Feta Cheese By Michelene
