Mexican Rice in Microwave

Recipe by This is a healthy and quick way to make a version of Mexican rice. Keeping the house cool in the summer or if there is not enough room on the stove for another pot. Recipe learned from Michellene Newman.

Ingredients:


  • 1 cup Rice, 1/4 c minced onion, 1/4 tsp sea salt, 2 TBSP Lime oil, 1-8oz can Tomato Sauce, 2 cans water, 1 c frozen peas optional

Directions:


Place round mold on a micro safe plate. Have octagonal SILPAT ready for a cover. Place onions and oil in round in micro for 45 sec. Add rice, swirl to coat in oil. Add peas and salt. Pour in sauce. Fill can 2 times with water, add water to rice. Cover with octagonal SILPAT. Cook for 17-20 minutes.
