Microwave Couscous

Recipe by I needed a fast and easy recipe to make in the microwave, so I created this couscous recipe. It's one of our family favorite dish! It also was a hit at my "Hot nights, cool kitchen" workshop.

Ingredients:


  • 1 cup semolina
  • 1 cup chicken broth or water
  • 2 zucchini's
  • 2 tomatoes
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 small eggplant
  • 1 can (15 oz) chickpeas
  • 2 garlic cloves
  • 2 tsp DAH Zesty Mediterranean herbs blend
  • 1 Tbsp DAH Sweet Basil olive oil
  • Salt & pepper to your discretion
  • Fresh basil or mint (optional for finishing your dish)

Directions:


Place your medium or large round mold in a microwave-safe plate. Put the semolina in your round mold pour over it the chicken broth, add 2 tsp of DAH Zesty Mediterranean herbs blend, 1 Tbsp of DAH Sweet Basil olive oil, a pinch of salt.Place the octagonal Silpat on top of your round mold, cook in the microwave for 1 minute 30 and let sit for 5 minutes until the semolina has absorbed all the liquid.While the semolina is cooking and resting, cut zucchinis and eggplant in quarter-sliced using the cake server knife on the Roul’pat.Chop the bell peppers and tomatoes with the Eco-chop.When the semolina is ready, stir well with the polyamide spatula, and add all the veggies. Drain the chickpeas and add them to your couscous. Crush the garlic cloves using the DAH garlic press without peeling them. Add some salt & pepper to your discretion. Stir. Place the octagonal Silpat on top and cook in the microwave for 8 minutes. You may add 1 or 2 more minutes depending how cooked you like your vegetables.Finish your dish with some fresh basil or mint leaves.Bon appétit !
