Mint Chip Brownie Ice Cream Cake

Recipe by I have made several of these this summer. They are easy to make and you can vary the flavors and sauces. How about butter pecan ice cream with a caramel sauce!

Ingredients:


  • 1 packaged brownie mix for a 9 inch pan mixed according to package directions
  • 1 jar hot fudge sauce
  • 1/2 gallon of mint chip ice cream, softened

Directions:


Preheat oven to 350 degrees. Prepare brownie mix according to instructions. Pour into the Medium Round Mold and bake 20-22 minutes. Cool for at least one hour.

Place 1/2 of the ice cream on top of the brownie in the pan. Spread hot fudge over the ice cream. Top with remaining ice cream and, using the Octagon Silpat, press gently to smooth out any pockets of air. Cover and freeze overnight.

Once frozen it can be removed from the freezer 10-15 minutes prior to serving. Unmold and enjoy!
