Moroccan Beef with Curry, Mangos, and Sweet Potatoes

Recipe by New family favorite ~ perfect for left over roast beef!! They all just kept saying over and over how amazing this was. Note: if you would like to pre-cook the sweet potatoes while you are prepping the rest of the ingredients, this recipe can be assembled, cooked and ready to serve within 45 minutes to 1 hour.


  • Casserole Ingredients:
  • 4-6 cups cooked roast beef, cubed
  • 2-3 medium white sweet potatoes, cubed (not yams)
  • 2 mangos, peeled, large dice
  • 2 cups white raisins
  • Sauce Ingredients:
  • 1 teaspoon red curry paste
  • 2 garlic cloves minced
  • 1/4 teaspoon DAH cinnamon (from Spice for Life)
  • 1/4 teaspoon DAH cinnamon (from Spice for Life)
  • 1 teaspoon DAH ground turmeric (from Spice for Life)
  • 1 tablespoon DAH Mango White Balsamic
  • 1 can coconut milk


Preheat oven to 350 degreesPlace Grande Flexipan Mold on Perforated Baking SheetTo pre-cook sweet potatoes: Steam in microwave by placing cubed sweet potatoes in round flexipan mold, cover with octagonal silpat and cook on high for 6 minutes. Carefully remove cover away from you to avoid the steam as it is released. Set aside.Prepare casserole ingredients and add to Grande Mold, toss lightly to mix.In a bowl, combine sauce ingredients, adding more curry if desired. Pour over casserole ingredients.Cook un-covered for 30 minutes if potatoes are pre-cooked. Cook an additional 20-30 minutes for raw sweet potatoes, or until fork tender.Serve with rice or quinoa.
