Paleo Baked Swedish Meatballs

Recipe by I made these as practice for a Paleo Cooking party and now they have quickly become a family favorite! Top them on a bed of Cauliflower rice and you have not only a total paleo dinner but a very tasty one!


  • Ingredients: 1/2 cup finely chopped onion 1 tsp olive oil 1 tsp salt 3/4 lb ground beef 3/4 lb ground pork (or turkey) 1 egg 1/2 tsp black pepper 1/4 tsp allspice 1/4 tsp nutmeg (For the optional sauce:) 2 c beef broth 1/4 c heavy cream or coconut milk 1 ½ - 2 tbs arrowroot starch 1 ½ c fresh mushrooms ½ cup chopped onions 1 tbs sea salt 1tbs fresh ground pepper


1. Preheat oven to 400 degrees. In a large bowl, combine all ingredients and mash with your hand to combine.2. Roll the meat into 1 oz balls (a little smaller than a golf ball, I use the small scoop) and place on a Flexiflat or Cake pop tray, I use the cake pop tray.3. Bake for approximately 15-20 minutes or until the internal temperature of the meatballs reaches 160 degrees.4. If you’re looking to make the Swedish meatball sauce, pour the drippings into a sauté pan or I used the medium round mold in the microwave and saved the stovetop mess. Add one cup of beef broth with the onion, mushrooms salt and pepper. Microwave on high for about 3-5 minutes. While that is heating add arrowroot to the other cup of beef broth and whisk until dissolved. Add to the heated broth and add coconut milk. Microwave for approximately 4-5 minutes whisking every 30 seconds to 1 minute. If it gets too thick then add a bit more broth. When meatballs come out of the oven I add them to the sauce and then spoon over cauliflower rice.
