Paleo Ham and Kale Quiches

Recipe by These are dairy free, but you won't even notice! And have only 5 ingredients too! Breakfast on the go...Eat on your way out the door in the morning! By Michelene Newman Barton

Ingredients:


  • 1 cup cauliflower, 3/4-1 cup diced cooked ham, 1 cup kale, torn into bite size pieces and lightly packed, 6 large eggs, salt and pepper

Directions:


Preheat oven to 375 degrees. Place Straight Muffin Tray on Perforated Baking Tray. In a food processor or new Eco-Chop, process cauliflower until it resembles rice. Set aside. In the DAH Stainless Mixing bowl, and with the DAH Whisk, whisk the eggs and season with salt and pepper. Divide up the pieces of ham and kale between each muffin well,first. Then pour cauliflower rice/egg mixture over each muffin well approx 3/4 full and bake until eggs feel set. about 20-24 mins.
