Paleo Pumpkin Granola

Recipe by Delicious all year long! Store in container in cool, dry place, and have a quick, easy, and healthy breakfast ready for you! Adapted for Demarle use from "OMG, That's Paleo?" cookbook.

Ingredients:


  • 1/2 cup almonds
  • 1/2 cup pumpkin seeds (pepitas)
  • 1/2 cup pecans
  • 8-10 dried medjool dates, pits removed, roughly chopped
  • 1/2 cup canned pumpkin puree
  • 1/3 cup coconut oil, melted
  • 1/3 cup unsweetened shredded coconut
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 2 TB cinnamon
  • 2 TB nutmeg
  • 1/8 tsp ground cloves
  • 1/8 tsp ground ginger
  • pinch of Bolivian Rose Sea Salt

Directions:


Preheat over to 325 degrees. Place Deep Flexiflat on Perforated Baking Sheet and set aside.Chop almonds and pecan in Eco-chop. Place coconut oil in Mini Round Mold. Cover with Octagonal Silpat. Microwave for about 1 minute, or until fully melted.In Stainless Steel mixing bowl, add pumpkin puree, coconut oil, maple syrup, vanilla extra, and all spices. Mix well. Then add the nuts, seeds, and dates, and mix well with the wet ingredients. Use spoon to spread out the mixture on to the Deep Flexiflat evenly, so everything with cook at the same time. Place in oven and cook for about 30 minutes, mixing the granola after 15 minutes. Let cool. Eat all by itself or topped with Coconut, Almond, or Dairy milk.
