Parmesan Cheese Cup Salad

Recipe by This will knock your friends off their chairs. Very impressive presentation and the taste is over the top. They eat the cup and all!

Ingredients:


  • 1/4 cup shredded parmessan or italian blend cheese
  • Baby Spinach
  • Red, yellow and green peppers
  • Tomatoes

Directions:


1. Take 1/4 cup of shredded parmesan cheese and dump on the octagonal Silpat. Pat into a large circle, enough to cover the backside of a muffin mold or the bottom of an upside down glass. Gently place the Silpat in the microwave, select 22 seconds (time may vary depending on the power of your oven) and cook. Watch through the window, it will bubble and melt, don't let it burn.

2. Stop oven and take out the Silpat with a hot pad. It will be very hot. Set Silpat on flat counter for 30-60 seconds. While still hot and soft, turn Silpat upside down and center cheese over top of inverted muffin mold or glass cup. Peel the cheese off and let it hang down over the shape to cool.

3. You can gently use your hand to form the cheese around the mold for a tighter cup. Cool for two minutes. Gently remove and place on serving plate. Fill with greens and cut up veggies. Top with your favorite dressing.
