Peach Coffee Cake

Recipe by Hands down the best gluten free anything!


  • For the Filling:
  • 1 C hazelnuts
  • 1/4 C white sugar
  • 1/4 C brown sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • For Peaches:
  • 12 peaches, peeled and quartered
  • 1/4 cup sugar
  • Cake Batter:
  • 2/3 C butter
  • 1 C white sugar
  • 3 large eggs
  • 1 tsp vanilla
  • 2 C Pamala's Gluten Free Pancake Mix
  • 1 C sour cream


1. Preheat oven to 350. Mix together Filling and set aside.

2. Prepare peaches: Peel and quarter peaches and mix with 1/4 cup sugar. Place peaches in bottom of Flexipan Fluted Round Mold atop Perforated Baking Sheet and set aside.

3. Cake Batter: Soften butter in mixing bowl. Add sugar and mix well. Add eggs one at a time, then vanilla. On low speed alternately add Pancake Mix, then sour cream until incorporated. Spoon 1/2 batter into pan, covering the bottom. Sprinkle 1/2 of the filling over batter evenly, repeat with layer of batter, then sprinkle remaining filling evenly over batter.

4. Take a knife and insert straight down into batter moving up and down around the pan in a zig zag motion to marbleize cake. Do not smooth out the batter. Bake for 45-60 minutes when inserted toothpick comes out clean.
