Pecan Pie Cupcakes

Recipe by These are the easiest, quickest mini cupcakes I have ever made and they are so good. They taste just like pecan pie. This is my go to dessert for unexpected company. They also freeze well. Submitted by Joanne Kidd

Ingredients:


  • 1 cup chopped pecans
  • 1/2 cup all purpose flour
  • 1 cup packed brown sugar
  • 2/3 cup butter, melted
  • 2 eggs

Directions:


Preheat oven to 350˚In your stainless steel bowl, comine all indredients and mix well.Divide mixture evenly into the mini muffin trayBake for approximately 18 minutes
