Perfect Roasted Chicken

Recipe by Don't let a whole bird intimidate you! There's only two ingredients and it's full of flavor. Pair with root vegetables and you have your next family dinner.


  • 1 roasting chicken, 5 lb
  • 1/2 stick of butter, softened
  • 1-2 tblsp Rosemary Basil Thyme Herb Blend, to taste


1. Rinse and dry the chicken and place it in the Flexipan Grande Mold. Preheat oven to 425 degrees and place oven rack in center position.

2. In a small bowl, mix together butter with Rosemary Basil Thyme Herb Blend. With your fingers, separate the skin from the breast and spread butter over the meat and replace the skin.

3. Continue to rub the entire chicken with butter including the inside. Tie the legs together with kitchen twine. Roast in oven for 1½ hours or until juices run clear. Cover chicken with a Silpat during the last 30 minutes of cooking to prevent the skin from over-browning. Allow to rest at room temperature for 20 minutes prior to slicing.

I make this chicken at least once a week and I have found that I have a perfect chicken every time if I reduce the temp to 325 after the first 45 minutes of cooking. This also means I do not need to cover with my silpat at the end. Everyone in the family loves this recipe and it makes for great leftovers too. The Roasted Garlic and Chives herb blend is another one we like to use with our roasted chicken!
