Taquitos Gluten-Free

  • 1 lb. Shredded Meat of Choice
  • 2 tsp. of Cumin
  • 2 tsp. of Garlic Powder
  • Salt & Pepper to taste
  • 1/2 lb. Pepper Jack Cheese, Shredded


Preheat oven to 350 degrees F. Place Silpat on Perforated Baking Sheet and set aside.

If using a Roasted Chicken, shred the chicken and toss the chicken with spices. If cooking meat, season all sides of meat, sear each side and then cook in a slow cooker and shred when finished. For ground beef, cook on stove top with spices.

Place shredded cheese in rounds on the Silpat, about 4 inches in diameter. Cook for 10 minutes until the cheese is completely melted and the edges are golden.

Take cheese rounds out of the oven and place a line of meat down the middle. Do not overfill.

Using the Polyamide Spatula to get under the edge of the cheese, carefully roll the cheese up and cook for 5-10 more minutes, until browned.

Remove from oven. Toquitos crisp up as they cool slightly.

Serve with a side of fresh Guacamole and enjoy!
