Pumped Up Pancakes

Recipe by Everyone loves a good pancake - we especially love these at my house. They are hearty and satisfying. With added nutrients, I feel so good about making these for the kids. Baked or made traditionally, they are always a winner. From the kitchen of Rebekah Osowick


  • 1 c whole wheat flour
  • 1 tbsp baking powder
  • 1/4 c flax seed meal
  • 3 tbsp chia seeds
  • 2 tbsp sugar
  • dash salt
  • 1 c milk
  • 2 tbsp oil
  • 1 egg, beaten


In your mixing bowl, add all dry ingredients and mix. In another bowl, combine milk, oil and egg. Stir to combine and then add to dry ingredients. Stir. If you want, this is a good time to add a handful of chocolate chips or berries (or both).For griddle pancakes - using a medium scoop, place mixture on hot griddle until bubbly. Flip and cook again until golden on the bottom.For oven baked pancakes - choose your favorite Flexipan (teddy bear, butterfly, round for a few options) or even the Silpat and place it on your Perforated Baking Sheet. Preheat your oven to 350 degrees. Fill wells of Flexipan between 1/2 inch to an inch depending on how high of pancakes you want. Bake 12-15 minutes or until golden and firm. Enjoy!
