Pumpkin Apple Muffins

Recipe by A great Autumn treat, that we eat all year long. My grandchildren like to change it up by using a cup of chocolate chips in place of the apples, cinnamon and nutmeg. So easy to make, but full of flavor.By Peggy Pugh

  • Mini-Muffin Tray
  • Perforated Baking Sheet
  • spice cake mix
  • 1 can pumpkin (the single pie size) or 2 cups cooked pumpkin
  • 2-3 Granny Smith Apples peeled, cored and diced
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1 tsp cinnamon

Preheat oven to 325 degrees. Place dry cake mix in a mixing bowl. Add the pumpkin and mix until well blended. In a separate bowl, place the diced apples and mix with the cinnamon, cloves, and nutmeg. Fold the apples into the batter. Fill Mini-Muffin section 2/3 full.Bake at 325 degrees for 22-24 minutes. This recipe is 2 Weight Watchers Points if you are counting.
