Pumpkin Bread (Cake)

Recipe by This recipe is so good that it can be a dessert! It's fun to make in all different shapes and sizes. Serve alone or dust with powdered sugar or a glaze. The original recipe called for 3 cups of sugar but I have reduced to 2 cups. If you like an even sweeter bread then add the sugar back in, but I believe it's plenty sweet with 2 cups. Enjoy!

Ingredients:


  • 2 cups sugar
  • 2 cups flour
  • 1 teaspoon each: cinnamon, nutmeg and allspice (or 3 teaspoons pumpkin pie spice)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 (15 oz) can pumpkin
  • 1 cup vegetable oil
  • 1 teaspoon pure vanilla extract

Directions:


Place flexipan mold/tray of choice on the perforated baking sheet and set aside. In our Stainless Steel mixing bowl, combine the sugar, flour, spices, baking powder, baking soda and salt. In another bowl, combine eggs, pumpkin, oil and vanilla. Mix well. Stir wet ingredients into dry ingredients, just until moistened. Bake at 350 degrees for 20-30 minutes in muffin shapes, 45-50 minutes in a loaf mold. Check with a toothpick to make sure they are done cooking before removing from the oven. Allow to cool for about 10 minutes before removing from the flexipans. Longer cooling time is fine too!
