Pumpkin Spice Granola

Recipe by Looking for a yummy, healthy way to start your day? Go grain free with this recipe - all the spices to warm you up on a winter day! Gluten-free, Paleo, grain-free, dairy-free (unless you pour milk on it!). Adapted from "OMG that's Paleo?" cookbook.


  • 1/2 cup sliced almonds
  • 1/2 cup pumpkin seeds (pepitas)
  • 1/2 cup pecans, chopped
  • 1/2 cup unsweetened coconut flakes
  • 8-10 medjool dates, pitted, chopped
  • 1/3 cup coconut oil, melted
  • 1/2 cup pumpkin puree
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 Tablespoons Cinnamon
  • 1 Tablespoon Nutmeg
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground ginger
  • pinch of salt


1. Preheat oven to 325F. Place Large Silpat on Large Perforated Baking Sheet.2. In a large mixing bowl, add pumpkin puree, coconut oil, maple syrup, vanilla, and all spices. Mix well.3. Add the nuts, seeds, coconut, and dates and mix well with the pumpkin mixture.4. Pour the granola mixture on Silpat. Spread the mixture evenly.5. Place in oven and bake 30-40 minutes, moving granola around 1-2 times.6. Let Cool. 7. Eat it all by itself or with a yogurt & fruit parfait. Or enjoy with coconut milk, almond milk, or dairy milk (may not be paleo).
