Revved Up Southwest Salad

Recipe by This salad is flexible. Use cubed mozzarella or kidney beans if that's what you have on hand. Try it with DAH Tahitian Lime Olive Oil or Mango White Balsamic. For a nicer presentation, layer the ingredients as shown in the recipe photo.


  • 1 cup packed baby spinach (torn into bite-sized pieces)
  • 1 cup wild rice blend (cooked)
  • 1 cup black beans (rinsed and drained)
  • 1 cup frozen corn (thawed)
  • 1/2 cup quartered grape tomatoes
  • 1/2 cup crumbled feta cheese
  • 2 Tbsp Meyer Lemon Olive Oil Blend (Demarle at Home)
  • 1 Tbsp Traditional Balsamic Vinegar (Demarle at Home)
  • 1/2 tsp Black Lava Salt (Demarle at Home)


Toss all ingredients except the salt. Sprinkle salt on salad and toss again.
