Ribbon Tart

Ingredients:


  • 2 large zucchini
  • 1 large yellow squash
  • 5 carrots
  • 3 packages of 1 oz. prosciutto slices
  • For custard:
  • 2 eggs
  • 1/2 cup heavy cream
  • 1 cup grated gruyere'
  • salt to taste

Directions:


Preheat oven to 350 degrees.

Cut the puff pastry to to fit the size of the Flexipan Medium Round mold or the Flower mold then pre-bake for 10 minutes at 350 degrees. Cool.

Mix the egg, cream, and cheese then pour over the pastry.

Cut the zucchini, squash, and carrots into strips. You can use a vegetable peeler. Heat a large pot of salted water and prepare a large bowl of ice cold water. Put the sliced vegetables in the boiling water for 10 seconds and then remove from the water with a slotted spoon and put them in the ice water to stop cooking, drain well and dry with paper towels.

Cut the proscuitto in half lengthwise.

Spread four slices of zucchini in lenth. The slices should overlap slightly in length, creating a long strip of zucchini. Cover it with the yellow squash and then cover that with the carrots. Repeat, zucchini, squash, carrot and add the prosciutto. Repeat two more times for 6 layers. Cut if you need to. Then carefully foll the vegetables and ham and place on top of the custard inside the pre-baked puff pastry crust.

Place the rolled vegetables and ham, side up and carefully press. Bake for thirty minutes at 350 degrees.

This is beautiful but work. The positioning of the crust was tough, partially because I do not have the molds mentioned in the recipe. The directions are a little vague for such a difficult presentation. It is also costly. To reduce costs next time I am just going to use ham and a cheaper but good swiss. The taste was wonderful. It was a hit and I do recommend you try making it before you need to make it for a party, you will need the practice. I also would like to try to make a smaller size one, to see if it is easier to handle the crust issues.

When I saw this in our new catalog, I was taken by it's beauty and looked it up on our website. It sounded so delicious, I had to make it. My family and I were not disappointed. While it is a little labor intense and took me a lonnnng time to put it together (I'm still a little slow in the kitchen,even after all these years), it was worth the effort.
